My daughter’s favorite lunches include hummus with pretzel chips and a cheese plate. For the cheese plate I just slice up several kinds of cheese (or put in a hunk, as with goat cheese or brie) and include crackers and a knife. Another favorite is smoked salmon on a bagel thin. I spread the bagel thin (a bagel is just too much bread) with cream cheese or a goat cheese spread, then I layer smoked salmon inside. This is always a favorite and I like that she’s getting the omega acids and protein in addition to carbs.

I like cooking up an egg with whatever veggies I have on hand–zucchini, bell pepper, mushrooms. A quinoa burger would go great in this mix!

One of my favorite healthy lunches is black beans, rice, chicken, guacamole, and pico de gallo. Simple and delicious!

I like to make my own antipasto platter with salami, cherry tomatoes, olives, peperoncini etc. yum!
